Gluten Free Turkey and Spinach Meatballs
Gluten Free Turkey and Spinach Meatballs

Ingredients
2, 8 ounce packages of ground turkey
1 16 ounce bag of spinach
2 eggs, beaten
1 1/3 cup Gluten Free Bread Crumbs (I use Aleia’s Italian style)
1 packet of Gluten free chicken bouillon (I use herbox sodium free)
1/2 cup grated parmesan cheese
1 tablespoon Italian seasoning
1 tablespoon garlic powder
1 teaspoon onion powder
2 tablespoons butter
1 tablespoon minced garlic
1 jar, marinara sauce (I used homemade but store bought is fine too!) (or you can use an Alfredo sauce!)
salt and pepper to taste (I use a teaspoon each)
Directions
clean and chop your spinach
add oil to a pan and turn on to medium low heat
sauté your spinach until the spinach has decreased in size, wilted together and has taken on a dark green color
let spinach cool for about 10 minutes
preheat oven to 350F
add ground turkey to a bowl and add in gluten free bread crumbs, chicken bouillon, Italian seasoning garlic powder, onion powder, parmesan cheese and spinach. Mix together well.
add marinara to an oven safe pan
roll your turkey mixture into balls and place on top of marinara
melt butter and minced garlic in an oven safe bowl
top meatballs with butter mixture
bake for 30 minutes
top with more parmesan or mozzarella cheese! Serve with pasta, broccolini or risotto!
To store; place in a storage container and put into refrigerator. Will keep for 3-4 days.
