Gluten Free Turkey and Spinach Meatballs

Ingredients

  • 2, 8 ounce packages of ground turkey
  • 1 16 ounce bag of spinach
  • 2 eggs, beaten
  • 1 1/3 cup Gluten Free Bread Crumbs (I use Aleia’s Italian style)
  • 1 packet of Gluten free chicken bouillon (I use herbox sodium free)
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 jar, marinara sauce (I used homemade but store bought is fine too!) (or you can use an Alfredo sauce!)
  • salt and pepper to taste (I use a teaspoon each)

Directions

  • clean and chop your spinach
  • add oil to a pan and turn on to medium low heat
  • sauté your spinach until the spinach has decreased in size, wilted together and has taken on a dark green color
  • let spinach cool for about 10 minutes
  • preheat oven to 350F
  • add ground turkey to a bowl and add in gluten free bread crumbs, chicken bouillon, Italian seasoning garlic powder, onion powder, parmesan cheese and spinach. Mix together well.
  • add marinara to an oven safe pan
  • roll your turkey mixture into balls and place on top of marinara
  • melt butter and minced garlic in an oven safe bowl
  • top meatballs with butter mixture
  • bake for 30 minutes
  • top with more parmesan or mozzarella cheese! Serve with pasta, broccolini or risotto!
To store; place in a storage container and put into refrigerator. Will keep for 3-4 days.
