Japanese Style Fluffy Pancake Gluten Free

makes two pancakes
Ingredients
2 eggs
1 tablespoon milk
3 teaspoon water
1 teaspoon vanilla
1/4 cup Gluten Free Flour (I use Bob’s red mills 1 to 1)
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 tablespoons sugar
butter (optional)
maple syrup (optional)
powdered sugar (optional)
Directions:
separate egg whites and yolks into two bowls
to the egg yolks add in milk, vanilla and whisk together
stiff in Gluten Free flour, salt and baking powder into egg yolk mixture
whisk egg whites until they begin to get foamy, very slowly add in sugar
once egg whites stiff peaks form slowly add into yolk mixture spoonful by spoonful and gently fold in.
gently pour into a piping bag
spray pan with non stick oil, and turn to medium heat
make two evenly sized pancakes with half your mixture, add in 1 teaspoon of water to pan and cover with lid
steam for 5 minutes
add the rest of your mixture right on top of your pancakes add 1 teaspoon of water to pan and cover
steam for 3 minutes
carefully flip pancakes, add 1 teaspoon water to pan
steam of 3 minutes
remove from pan
top with butter, maple syrup, or powder sugar
