Japanese Style Fluffy Pancake Gluten Free

makes two pancakes

Ingredients

  • 2 eggs
  • 1 tablespoon milk
  • 3 teaspoon water
  • 1 teaspoon vanilla
  • 1/4 cup Gluten Free Flour (I use Bob’s red mills 1 to 1)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons sugar
  • butter (optional)
  • maple syrup (optional)
  • powdered sugar (optional)

Directions:

  • separate egg whites and yolks into two bowls
  • to the egg yolks add in milk, vanilla and whisk together
  • stiff in Gluten Free flour, salt and baking powder into egg yolk mixture
  • whisk egg whites until they begin to get foamy, very slowly add in sugar
  • once egg whites stiff peaks form slowly add into yolk mixture spoonful by spoonful and gently fold in.
  • gently pour into a piping bag
  • spray pan with non stick oil, and turn to medium heat
  • make two evenly sized pancakes with half your mixture, add in 1 teaspoon of water to pan and cover with lid
  • steam for 5 minutes
  • add the rest of your mixture right on top of your pancakes add 1 teaspoon of water to pan and cover
  • steam for 3 minutes
  • carefully flip pancakes, add 1 teaspoon water to pan
  • steam of 3 minutes
  • remove from pan
  • top with butter, maple syrup, or powder sugar
