Strawberry Shortcake Gluten Free Overnight Oats

Cook time: at least 1 hour to overnight

Ingredients

  • 1 cup Gluten Free old fashioned rolled oats (I used Bob’s red mills)
  • 1 tablespoon chia seeds
  • 5 ounce container of coconut milk yogurt, coconut flavored
  • 1 tablespoon almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 tablespoon honey (skip honey and use extra maple syrup to make this vegan)
  • 1/2 cup diced strawberries
  • 1 teaspoon lemon juice

Directions

  • place GF oats and chia seeds together in a medium size bowl, container or mason jar.
  • add in coconut milk yogurt, almond milk, 1 tablespoon of maple syrup, almond milk and vanilla extract. mix together well.
  • wash and dice up your strawberries
  • in another bowl, add strawberries, lemon juice and honey (or maple syrup for vegan option)
  • place strawberry mixture on top of GF oat mixture
  • let sit in fridge for at least 1 hour before serving
